Leftover Pecan Pie Parfait takes leftovers to a whole new level.
As much as I love the big Thanksgiving meal and look forward to it all year long, one of my favorite things about Thanksgiving is the leftovers. Yep. You read that right. I love having leftovers for days. And desserts. You can’t forget the desserts. This Leftover Pecan Pie Parfait is a mashup of all good things.
Dessert is one of my favorite food groups. I mean seriously, you can’t trust people who say no to dessert. Like Oprah says, when someone shows you who they are, believe them.
If someone says no to this dessert, you don’t need that type of negativity in your life. Unless they’re allergic to pecans, then they get a pass. Or lactose intolerant. But that’s it!
This dessert idea came about because last year my family almost came to blows over mom’s leftover pie. Ok it was me and my niece but still, we need a way to make leftover desserts go a long way. My niece can’t get the last piece of pie always just because she’s our baby girl. We have to share.
This Leftover Pecan Pie Parfait really stretches that last couple of pieces of pie. You will probably even have some Cool Whip left over so plop it on top. You’re already half way there.
This dessert is so simple to make which is exactly what you need after putting that meal on the table. It uses broken up pieces of leftover pecan pie with some ice cream and maple infused whipped cream. I found some butter cinnamon pecans at the store and threw them in there too. Or you can make your own. And to make this just a little bit more over the top, I drizzled some pure maple syrup in there too.
Now how can you say no to that?! Yes this is a little indulgent but when else are you going to overdo it? Enjoy!
Leftover Pecan Pie Parfait

- Leftover pecan pie slices
- Vanilla ice cream
- Whipped Cream
- Maple Syrup (2 Tbsp for every 1 cup whipped cream)
- Ground Cinnamon (1/2 tsp for every 1 cup whipped cream)
- Butter Cinnamon Pecans
- * amounts depend on how much pecan pie you have leftover.
- Place pieces of pecan pie in parfait cups.
- Scoop vanilla ice cream on top of pecan pie.
- Optional: Drizzle with Maple Syrup.
- Top with pecans.
- Add more pecan pie.
- Mix together 1 cup whipped cream and 2 Tbsp Maple Syrup and 1/2 tsp ground cinnamon. Place a dollop of whipped cream on top of the pecan pie.
- Add more pecans on top.
