At work we often have potluck breakfast or brunch for the staff and Miss Carla always brings this Sausage Potato Casserole. Always. And that is because everyone loves it.
After passing it up a few times I finally tried it and immediately asked for the recipe. I made it for my parents last year and they loved it. I froze some for them for an easy, quick breakfast option for them.
Ingredients for Potato Sausage Casserole
- Breakfast Sausage
- Onions
- Hash Brown potatoes
- Cream of chicken condensed soup
- Sour cream
- Cheez Whiz
That’s it. You basically cook the sausage and then throw everything together.
Tips for baking Potato Sausage Casserole
- You can either use pork breakfast sausage, soy sausage or even turkey sausage (like I did).
- If you have grease after cooking the sausage, you will want to drain the sausage. Just pick up some paper towels with tongs and soak up the grease with the paper towels.
- If you want a crunchier top, like I did, bake for 10 minutes longer.
- You can also add in some diced bell peppers when you add the onions to give it more of a crunch flavor.
- Drizzle some shredded cheese on top if you want an extra cheesy casserole.
- Cook the turkey and combine everything the day before, put it in the casserole dish, cover refrigerate then bake the next day. I would add a few more minutes if you have it in the refrigerator or let sit out for 30 minutes to bring to room temperature.
This is the perfect potluck dish since it can be eaten for breakfast, brunch, lunch or dinner. It’s super simple and only takes about seven minutes before it is in the oven baking itself to perfection.

Ingredients
- 1 lb pork or turkey sausage
- 1 32 oz package hash brown potatoes, thawed
- 1 can Cream of Chicken condensed soup
- 1 8 oz jar Cheez Whiz
- 1 c sour cream
- 1/2 c chopped onion
- Garlic powder, salt and pepper, to taste
Instructions
- Preheat oven to 350 degrees.
- Brown sausage in skillet, stirring until cooked and crumbled. Season with garlic powder, salt and pepper. Drain grease from skillet.
- Add remaining ingredients to skillet. Mix well until thoroughly combined.
- Spoon into greased 9x13 baking dish. Place dish in oven and bake for one hour.
