Slow Cooker Picadillo

Slow Cooker Picadillo is a simple beef soup made even easier by making it in the slow cooker. Perfect for a family get-together or a Monday.

Did you know there is such a thing as Slow Cooker Picadillo. Hello! Genius.

My mom used to make us this dish a lot growing up, and I’ve shared it previously here. She makes it still to this day and it is a favorite of my nephew Caleb’s. But we call it meat and papas. Simple I know but that’s how we grew up.

This dish combination is comfort food to me. It isn’t something I make myself very often but making it in the slow cooker is a game changer and will be something I will make more frequently. It seems the older I get, the  more I appreciate these great dishes I had growing up.

This recipe comes from a favorite food blogger, Vianney Rodriguez, aka SweetLifeBake. I am so excited to try out Vianney’s new cookbook, The Tex-Mex Slow Cooker. Recently I was sent Vianney’s cookbook to check out and I am so happy I received it. I’m a slow cooker gal all the way. I love the smells that come from a slow cooker and just the anticipation of getting home to the smells emanating from it. There are so many great recipes and I can’t wait to try more.

The anticipation of the Picadillo was too much for me so I had to make some homemade pinto beans to go with it. Once everything was finished I sat down to dinner and had to call my mom to tell her what I had made. It nearly had me in tears just thinking of having this meal in our house growing up. Comfort and smiles all around.

Ingredients

  • 1 tsp canola oil
  • 2 lbs lean ground beef
  • Salt, ground pepper and garlic powder, to taste
  • 1 Onion, diced
  • 3 medium russet potatoes, peeled and diced
  • 1 green bell pepper, diced
  • 1 1/2 c water
  • 1 tsp minced garlic
  • 2 tsp salt
  • 1 tsp freshly ground pepper

Instructions

  • In a large skillet, add canola oil until warm. Add in ground beef and onion. Season generously with salt, pepper and garlic powder. Cook until done.
  • Add beef mixture and all remaining ingredients to a slow cooker. Cook on low for 8 hours or until potatoes are tender.
