I can’t believe we are already into the second week of the new year. I’m off to a great start eating right for this new year and these Cinnamon Apple Overnight Oats are helping me stay on the right track.
I took quite a break for Christmas all the way past the end of the year. I had planned to take off for the Christmas holiday but then I got sick which extended my break. Why do I always get sick after Christmas? Every year it happens. My nephew came back with me after Christmas for the week between Christmas and New Year and bless his heart, the whole way on our road trip he kept saying “you’re getting sick Dede.” And I was like nope, not gonna happen. Then he fell asleep and I had to stop and get cough drops. Don’t even get me started on having to drive in the spitting ice at night with ice forming on my windshield and headlights. Ack!
So after my sick-induced break (which as of this writing, I’m relapsing so it’s still not over), I joined the Weight Watchers train again. I know, I know, I’ve tried it before but this new Freestyle program is my favorite of all time. It’s simple to follow and gives you so many options. I have stayed within my points the entire time. Ok, it’s only been since last Thursday but I’ll take it.
I’ll be sharing quite a few healthy options over the next few months on here as I try to stay on track. That doesn’t mean I’ll stop sharing all the sweets I love sharing. That just means my neighborhood firemen get more treats.

Cinnamon Apple Overnight Oats
Serves 1
These Cinnamon Apple Overnight Oats are simple, tasty and will help you stick to your New Year's resolutions to eat healthier.

Ingredients
- 1/2 c old fashioned oats
- 1/2 c almondmilk
- 1/4 tsp ground cinnamon
- 1 tsp maple syrup
- 1 Apple, peeled and diced
- 1/4 tsp ground cinnamon
- 1 tsp brown sugar
- 1 tsp water
- Optional: pecans
Instructions
- In a Half Pint Wide Mouth Mason Jar, add oats, almondmilk, 1/4 tsp ground cinnamon and maple syrup. Close jar lid and shake to combine. Place in the refrigerator overnight.
- When ready to eat, make apples by adding diced apples, 1/4 tsp ground cinnamon, brown sugar and water to microwave safe bowl. Cook for 1 1/2 - 2 minutes then stir. Top oats with apples and add pecans if you like.
