So last month I went to a dinner for work and had some of the best food ever. (Read about it here.) And one of the things I ate was a Brie Bite. Oh. My.
It tasted just like a mini pecan pie. Only it wasn’t. I went back for seconds of this one. Ok fine. Thirds. Or was it fourths?! And I don’t even like pecan pie. It’s not as sweet as a pecan pie so that may be why I like these bites so much.
As soon as I tasted it, I knew I wanted to recreate it at home. And I did just that. It had a sweet taste so I played around and found the perfect combination. And it’s only five ingredients. Perfect for dessert or an appetizer.
** Note: I made these again recently and ran out of honey so I used maple syrup instead – if you like sweet things, this works even better!!!
Pecan and Brie Bites
Ingredients:
1 Pillsbury pie crust
Brie wedge
Brown sugar
1/2 c chopped pecans
Honey or Maple Syrup
Instructions:
Preheat oven to 350 degrees.
Roll out dough and go over it with a rolling pin a few times to stretch it a bit.
Use a round cookie cutter or biscuit cutter to make circles. You can also use a small glass if you don’t have a cookie cutter.
You will place dough on a 24 Cup Mini Muffin Pan. Fit the dough into the rounds.
Slice pieces of the Brie wedge into small chunks. You will only use half of the Brie wedge per roll of pie crust dough.
Sprinkle a pinch of brown sugar over the cheese. Evenly distribute the pecans amongst the pan.
Drizzle a dash of honey or maple syrup on top of the pecans.
Place in the oven and bake for 14-16 minutes.
