Have you ever made a dessert and take it to work and think it will be something new for people only for them to say they used to have something similar all the time growing up? Yeah, that happened to me with these here bites of deliciousness. These Martina McBride No-Bake Peanut Butter Chocolate Cookies are a throwback from many a childhood spent in school lunchrooms apparently. But they are new to me.
I don’t know why we didn’t have these in our lunchroom but it’s probably a good thing we didn’t because I would have snatched them all up. If they’re new to you, I hope you’ll make them. If they’re a throwback, I hope they bring you fond memories and make them for your family.
I’ve made a few recipes from Martina’s new cookbook, Martina’s Kitchen Mix, and have loved everything. Once I saw these in the cookbook, I knew I wanted to make these beauties because they didn’t require a lot of ingredients, required no baking and I was craving something sweet. In the last few months I’ve made these too many times to count. I gave the second batch to my niece after I had a couple just so I wouldn’t eat them all. She shared them with her study group at school and they all loved them and remembered them from their childhood. Now I have new taste testers! And these little treats remind me of these Nutella Peanut Butter Balls
Ok so let’s talk about Martina McBride for a minute. I love her! You know I’ve been a country music fan since birth. I was country when country wasn’t cool. And I’ve seen Martina in concert a few times. In my old profession, Martina was a celebrity spokesperson for our domestic violence agency and I went to Nashville to meet with her and her team. Had I known then that I’d have a food blog and she was such a great cook, that meeting could have gone different! Martina singing Somewhere Over the Rainbow is the most amazing thing ever.

No-Bake Peanut Butter Chocolate Cookies
Yields 2 dozen cookies

Ingredients
- 1/2 c butter
- 1 3/4 c sugar
- 1/2 c milk
- 3/4 c creamy peanut butter
- 2 tsp vanilla extract
- 1/4 tsp kosher salt
- 3 c uncooked quick-cooking oats
- 1 c milk or dark chocolate chips
Instructions
- Melt butter in a 3 1/2 quart saucepan over medium heat. Stir in the sugar and milk. Bring mixture to a boil and boil for 1 1/2 minutes.
- Remove saucepan from heat and immediately stir in the peanut butter, vanilla, salt and oats. Stir mixture to combine thoroughly. Add in chocolates and stir together until combined.
- Line large baking sheet with parchment paper. Drop dough by rounded tablespoonfuls onto prepared baking sheets. Let cookies stand 30 minutes or until set.
