Easy Slow Cooker Barbacoa

February 2, 2017 By denise Leave a Comment

The taste of authentic Barbacoa made easy by cooking it in a slow cooker. Same great taste with hardly any effort.

Barbacoa is one of those foods for me that I normally would reserve for Christmas or breakfast tacos with the family.

Whenever I’m home with the family we go to a little restaurant close to my parents house and most of the family always orders a barbacoa taco to go with their breakfast.

Barbacoa

The only other time we have it is during Christmas. Our family get together consists of menudo, barbacoa and tamales. Plus all the desserts you can eat.

I’ve always seen this favorite Mexican dish as something hard to make but then I had a visit with my aunt over Christmas and she told me differently. She was preparing to make it for her family the next day and shared with me how she was going to do it.

Of course I had to try it too, but in my trusty slow cooker. And let me tell you, I’ll be making this again and often. It is so easy to make and the flavor is incredible. It tastes just like at home.
You can have it as is with some tortillas and fixins, maybe with some beans and Spanish rice, like I did. Or make them into taquitos or nachos for the big game.
