Snickerdoodles – #readingfoodie: United States of Cakes Cookbook

SnickerdoodlesWith the amount of sweets recipes I post, you know I am a sweets fanatic. So when I was asked if I wanted to reviewUnited States of Cakes Cookbook I jumped at the chance. Because I’m also a cookbook fanatic.

I received the book as I was going out of town for a couple of weeks. Then I got sick and that lingered for weeks. I finally sat down to look over the cookbook this past weekend and I was blown away.

Pretty much every dessert is something I would like to make and the photos were beautiful. It was hard for me to pick what I wanted to make and in the end I went with Snickerdoodles because they are my nephew Jacob’s favorite cookie.

The cookies were so quick to make and they were utterly soft and delicious. It took everything in me to only eat three cookies and save the rest for my coworkers. My nephew is going to love them when I take them home on my next trip!

United States of Cookbook Contents

I would definitely recommend this cookbook for any home bakers – seriously just look at the contents! Key Lime Pie is next on my list to make.

Snickerdoodles

Ingredients:

1 1/4 c all-purpose flour
1/2 tsp baking soda
1/2 c butter, room temperature
2/3 c sugar
1/2 tsp vanilla extract
1 egg, room temperature
1 tsp white distilled vinegar

Topping:
1/4 c sugar
1 tsp ground cinnamon

Instructions:

Preheat oven to 400 degrees F. Mix together flour and baking soda in a bowl. In a separate mixing bowl, beat butter, sugar and vanilla extract until fluffy. Beat in egg. Add dry ingredients and vinegar. Work into a smooth dough.

In a small bowl, mix together sugar and cinnamon. Divide dough into 20 equal sized pieces, roll into balls and roll in sugar mixture.

Place dough with room between each one on a baking sheet covered with parchment paper. Flatten balls slightly.

Place in the oven and bake for 8 minutes or until cookies have browned slightly. Let cookies cool for a few minutes on cookie sheet then gently move them to a rack to cool completely. Store in a dry place.
