It’s book review time again and I can’t wait to share this author with you.
A few of my favorite things to do include reading books, talking about books and watching sports. So when I get to combine them all in the form of a NASCAR romance novel?! Giddy up.
One of my favorite authors is Erin McCarthy. I first started reading her YEARS ago and fell in love with her writing. Then she started writing her Fast Track Series centered around the NASCAR community and I was cozied up in a corner chair and reading for days. There are now eight books in the series and I have enjoyed every one of them.
Final Lap is the latest book and it centers around NASCAR driver Cooper Brickman and Harley McLain. Harley has fallen for Cooper from afar. They talk at a wedding and Harley is saddened when he flirts with her identical twin sister Charity. You see where this is going right?
Yep, the old switch-er-oo. Is that how you spell that?
Anywhoo, one thing leads to another, bada bing, Cooper sleeps with Charity. Or so he thinks. He is desperately looking for a nanny for his newly placed ward (I obviously read too many historical romance novels to throw in “ward”) and asks Harley to take the job. Reluctantly she does and she and Cooper get closer and there is an attraction. Only there is that little lie hanging between them. Woah is Harley.
Meanwhile Cooper is feeling guilty because, hello, he slept with her sister but now is feeling something for Harley. How can that be?
There are other storylines in the book including Cooper’s teenage sister Mary Jane who has been foisted on Cooper by a selfish mother. And there is also a secondary line about Charity and her love life too.
You don’t have to be a NASCAR fan to read the books but if you aren’t, why not? You can share my favorite driver – Dale Earnhardt, Jr. baby.
Now on to the recipe. These quesadillas help break the tension between Harley, Cooper and Mary Jane. Quesadillas are one of my favorite snacks that really are a meal in and of themselves. My mother used to make cheese quesadillas for us as a snack all the time. These are easy to make and they pack some flavor. I went the super simple route and bought 2 flour tortillas at my favorite Mexican restaurant (for 53 cents y’all!) and a grilled chicken from the deli counter at the grocery store. Easy weeknight meal coming right up.
Goat Cheese and Chicken Quesadillas
Ingredients:
2 Flour Tortillas
1 c Spinach leaves, chopped
1 piece of Chicken, grilled (I used a thigh)
2 Tbsp Goat cheese
1/4 c Mexican blend cheese, shredded
1/2 Plum tomato
Pam cooking spray
Instructions:
Using a cast iron pan, spray pan with Pam spray. Once pan is heated, add spinach and cook for 3-5 minutes until spinach is wilted. Remove spinach from pan and set aside.
Add chicken to pan and heat up for 2-4 minutes. Remove chicken from pan.
Add tortilla to the pan. Let heat on one side then take off the heat and set on a plate. Repeat with remaining tortilla.
Spread goat cheese to heated side of one tortilla. Add Mexican cheese mix to heated side of remaining tortilla. Add spinach, chicken and tomato to Mexican cheese mix. Place tortilla with chicken mixture to the pan. Place remaining tortilla with goat cheese on top of other tortilla. Let quesadilla cook for 3-4 minutes. Flip over and cook for an additional 3 minutes. Remove from heat.
Voila. Easy quesadillas.
