Earlier this week I posted about Cuban Sandwiches. Oh those things were good. So today I’m posting another quick dish you can make with leftover pulled pork.
Oh mama these nachos were tasty. They had just the right flavor and were the perfect game day food. I actually want some right now!
I am leaving the ingredients without amounts because these can be made for one serving or ten. It just depends on how much you need.
Pork Nachos
Ingredients:
Tortilla chips
Left over pulled pork
Black beans, drained
Quesadilla Cheese, or your favorite cheese, shredded
Tomatoes, diced
Lettuce, shredded
Cilantro, diced
Instructions:
Preheat oven to 350 degrees.
Place chips on a heat proof dish, baking sheet or pizza stone.
Spread shredded cheese all over chips. Top with pork and beans.
Go ahead and throw some more cheese on top just to give it that little extra oomph.
Place in the oven and bake until cheese is melted. Watch closely as my cheese only took a few minutes to melt.
Take out of the oven and top with lettuce, tomatoes and cilantro.
Serve and enjoy!
