I don’t know when sweet potatoes overtook my love of potatoes but it has. If given the option now between a potato or a sweet potato, I will definitely take the sweet potato every time.
Well I thought it was time to also give butternut squash some time too. Together these were delicious and just sweet enough. I plan to use the leftovers to make soup.
Orange and Maple Glaze Sweet Potatoes and Butternut Squash
Ingredients:
2 sweet potatoes, peeled and cubed into 1 inch size
1 small butternut squash, cut in half then again
1/3 c orange juice
1/2 c maple syrup
Brown sugar
Ground cinnamon
Instructions:
Preheat oven to 350 degrees. In a large roasting pan, place the sweet potatoes and butternut squash in the pan. Sprinkle the brown sugar over the top. Sprinkle cinnamon on top of brown sugar.
Mix together orange juice and maple syrup. Pour on top of the potatoes and squash. Cover with foil and bake for 1 hr., turning potatoes and squash over half way through cooking.
