I think I have a thing for restaurants that serve a chicken and spinach or artichoke flatbread appetizer. First it was Outback and now it’s Olive Garden. I saw their Grilled Chicken Flatbread on the menu and knew I’d be making it at home soon enough.
This is the first time I’ve cooked with Flatbread and I have to say it’s very similar to a tortilla. When I cooked it in the oven it got very thin so that was a nice surprise. This was a hit all around.

Grilled Chicken Flatbread a lá Olive Garden
Ingredients:
Whole Wheat Flatbread
Olive oil
Minced garlic
Basil, thyme, oregano, salt and pepper, to taste
Alfredo sauce
Fresh baby spinach leaves
Grilled chicken, cooked and chopped or shredded
Mozzarella cheese, shredded
Instructions:
Preheat oven to 350 degrees. Place Flatbread on a cookie sheet sprayed with Pam spray. Mix olive oil and spices together. Brush on Flatbread. Bake for 8 minutes.
Spread Alfredo sauce over Flatbread. Place spinach leaves on Flatbread then top with grilled chicken. Sprinkle cheese on top of chicken then bake for 15 minutes.
