Heart-Shaped Spinach and Chicken Pizza

I am a fan of pizza. But I am also a creature of habit and usually only eat pepperoni or hamburger on mine. Occasionally I’ll even have cheese but that’s only if I I’m in a certain mood. I tried ham and pineapple in little pizza balls one time and almost gave up pizza altogether after that incident. That’s what I get for going outside of my box.

But recently I made my own version of Outback’s Chicken Artichoke Flatbread with raving success and it is sort of like pizza since it’s made with pizza dough. So when I wanted to make some cute heart shaped pizzas I knew right away that I wanted to combine chicken and spinach to try something a little different. I’ve seen this on menus before but never tried it. After this little one I made I will definitely try it at a restaurant.


Spinach and Chicken Spinach

Ingredients:

1 can thin pizza crust dough
1/2 c Frozen chopped spinach, thawed and drained
1 c Roasted or baked chicken, diced
Lite Alfredo sauce (as little or as much as you want)
Mozzarella and Parmesan cheese, low-fat (as little or as much as you want)

Instructions:

Cut pizza into heart shapes with cookie cutter or by tracing a heart-shape plate onto dough.

Preheat oven to package instructions. Pre-bake pizza dough for 7-9 minutes. Spread Alfredo sauce on partially baked dough. Sprinkle with Mozzarella cheese. Spread some spinach then chicken on top of cheese. Sprinkle Parmesan cheese on top. Bake 10-12 minutes.



** I also made heart-shaped pizzas using pizza sauce, turkey pepperoni, mozzarella and Parmesan cheese.
