I have been trying to get back to some healthy eating and I can always count on the Weight Watchers Message Board for some good points-friendly recipes. I have had this one in my “To be Made” pile for a while but was reluctant to try it. How good could this be to someone whose mother made homemade enchiladas all the time?
Well, it wasn’t like momma used to make but it was pretty darn good. Not to mention quick — which is always a plus for me. I’ll definitely put it in my rotation for quick go-to meals.
Bubble Up Enchilada Casserole
Ingredients:
1 pound lean ground beef
1 can enchilada sauce
1 small can tomato sauce
1 can reduced fat refrigerator biscuits (4 or 5 biscuits)
1/2 c Fat Free Cheddar Cheese, shredded
Instructions:
Preheat oven to 350 degrees.
Brown ground beef then drain. Mix in the cans of enchilada sauce and tomato sauce. Cut up the refrigerated biscuits and stir them in to meat mixture and mix well. Place meat mixture in a greased casserole dish and bake for 20-25 minutes. Take out of the oven and sprinkle with cheese. Bake an additional 10 minutes or until cheese is melted. Let stand 5 minutes before serving.
