Breakfast Frittata

I have never had a frittata in my life. I actually had to look up how to spell frittata. But I saw someone make one on The Food Network so I went to work checking out some different recipes to see what I could come up with. Naturally I went with my breakfast staples: eggs, green peppers, tomatoes, ham and cheese. Ah but I’m going to throw in some zucchini in there just to mix it up! Did you know before Weight Watchers the only time I ever ate zucchini was if it was fried. Now I love the stuff. Spinach and squash too. It’s crazy, I know.

For this being the first time I made this dish, I think I did pretty good. Okay maybe it was a little overcooked but it was still delicious. I really don’t like my egg whites to be runny at all so I left it under the broiler for maybe a tad bit too long.

This was enough to feed two people. And I paired it with these skillet or fried potatoes – whatever you want to call them — and threw in some green pepper, parsley and chives to add a little color to it. Well one color. These are becoming my favorite breakfast side dish. What else do you use as a side dish for breakfast? I may need to broaden my horizons.


Breakfast Frittata

Ingredients:

1 egg
1 egg white
2 Tbsp green pepper, diced
2 Tbsp zucchini, diced
6 grape tomatoes, diced
2 Tbsp ham, chopped
2 Tbsp Parmesan cheese, grated
Parsley and chives, to taste
Salt and pepper to taste

In a small oven-proof pan, sauté green pepper and zucchini for 5 minutes. Add ham and grapes. Sauté for 2 minutes more. Whisk together egg and egg white. Add salt and pepper to taste. Pour into pan and twirl it around so the egg covers the entire pan. Sprinkle some parsley and chives on the eggs. Cook for a few minutes to let the eggs set. Sprinkle cheese on top. Place the pan under the broiler until eggs are done to your liking. Keep a close eye on it so it doesn’t burn or over cook.

Skillet Potatoes aka Fried Potatoes

Ingredients:

1 russet potato, washed and diced small
1 tsp olive oil
Salt and pepper to taste
Green pepper, diced (add as little or as much as you want)

Instructions:

Heat a skillet over medium heat. Add the olive oil. Place the small diced potatoes and green pepper into the skillet. Season with salt and pepper. Cover with lid and cook on low-medium heat for 20 minutes stirring frequently.
