This is another recipe from the Barefoot Contessa. It was really nice and creamy but I had never used fresh Tarragon before and I found that it is too much for me. Next time I’ll cut back in the mayonnaise and also leave out the Tarragon. Other than that it was great.

Chicken Salad Veronique
Ingredients:
2 cups diced cooked chicken (use BC recipe for roast chicken)
1/2 cup good mayonnaise
1 1/2 tablespoons chopped fresh tarragon leaves
1 cup small-diced celery (2 stalks)
1 cup green grapes, cut in 1/2
Instructions:
Place the chicken in a bowl; add the mayonnaise, tarragon leaves, celery, grapes, 1 1/2 to 2 teaspoons salt, and 1 teaspoon pepper and toss well.
