Mexican Wedding Cookies

Traditional Mexican Wedding Cookies are a hallmark of Christmas gatherings. These nutty, delicate cookies melt in your mouth.

Mexican Wedding Cookies are all over the internet this time of year. Do you know them by this name, Pecan Sandies, Snowballs or something else?

This is one cookie I’ve never really thought I liked until my friend Salvador made some recently. I took a bite and was hooked. I immediately researched some to make myself. All the recipes I tried weren’t quite right but then my Aunt Maré brought these to my cousin Rosalyn’s funeral and I knew I had to have the recipe. They were Rosalyn’s favorite cookie so my aunt shared the recipe with me. Every time I make these, I will always remember Rosalyn and that’s a good thing.

These are a really simple cookie to make and people seem to really love them. I remember seeing them in Mexican bakeries growing up when we would go down to the Valley but I always went for the pink cookies or pan dulce (Conchas). I felt like such a grown up eating the Conchas because my family members always had some with coffee. Me and my hot chocolate would indulge in some too. But that’s a story for another post – whenever I get up the nerve to try my hand at Conchas.

In addition to Rosalyn, I have a couple of cousins who love these cookies so I wanted to make them to put into cookie gift boxes this year. I’m obsessed with these boxes and want to give them to everyone. I had such fun decorating them with some greenery, berries and trees. There’s nothing better than having all the Christmas lights on and a Christmas movie on in the background while you’re baking cookies and covered in flour or powdered sugar. I love it!

Mexican Wedding Cookies

Ingredients

  • 1 lb butter, softened
  • 1 c granulated sugar
  • 1 Tbsp vanilla extract
  • 4 c all purpose flour
  • 1 c pecans, finely chopped
  • Topping:
  • Confectioners sugar

Instructions

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, using an electric mixer, beat butter, sugar, and vanilla extract until light and fluffy.
  • Gradually add in flour and mix until incorporated.
  • Mix in pecans. Form dough into balls using a small cookie scoop.
  • Place balls on silpat covered baking sheet.
  • Bake for 15 minutes.
  • Remove from oven and let cool for 5 minutes then roll in 1/2 c powdered sugar or sift powdered sugar on top of cookies.
