The Christmas baking has commenced at my place. Someone last night even said this is my season as a way of introducing me. They know me so well. I love baking loads and loads of goodies. I may not eat all the goodies but by golly I like to make them. These Peppermint Chocolate Crinkle Cookies are ones I’ve been baking nonstop this season.
Earlier this week I shared my Painted Nutcracker Boxes with you. These Peppermint Chocolate Crinkle cookies were in one of the boxes so I thought I’d share it with you. Because, duh, you will want to make these.
I made something similar a few years back for a cookie exchange only that recipe called for Nutella. Being out of Nutella when I was making these, I went without it and relied more heavily on the Hershey’s recipe and one from What’s Gaby Cooking for these. They came out very fudge like on the inside which is just how I like them.
This year seems to be the year of peppermint for me so I threw some in there. I took these to a Christmas party this week and I put a little dollop of melted chocolate on top along with some peppermint bits so people would know they had peppermint in them. I don’t like surprising people when they bite into something. You can totally leave off the chocolate and peppermint pieces but I kind of like the added look to the cookies.
I’ll be sharing a couple of more treats with you leading up to Christmas. Somehow even though this is my most favorite holiday, it always sneaks up on me. I think I’ve planned and prepared and then boom, it’s two weeks until Christmas and I still haven’t done all the things I need to do.
Add to that and I’m helping to plan for my family’s big Christmas Eve get-together and helping my sister with the kids as they get their wisdom teeth removed. Ack! Time is flying by too fast people.
Peppermint Chocolate Crinkle Cookies

Ingredients
- 1 c unsweetened cocoa powder
- 2 c white sugar
- 1/2 c vegetable oil
- 4 eggs
- 2 tsp vanilla extract
- 2 c all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 c peppermint baking chips
- 1/3 c Confectioners powdered sugar
- Optional:
- 1/4 c chocolate chips
- 1/2 tsp vegetable shortening
- 2 peppermint sticks, crushed
Instructions
- In a large mixing bowl, add the cocoa powder, sugar and vegetable oil. Mix together with an electric mixer until combined. Add eggs and vanilla extract and continue mixing until combined. Add flour, baking powder, and salt. Mix with a spatula to incorporate all ingredients. Add in peppermint baking chips and mix to incorporate completely. Cover and refrigerate 3 hours or even overnight.
- Preheat oven to 350 degrees.
- Line a jelly roll or baking sheet with parchment paper or silpat. Using a tablespoon cookie scoop, scoop out dough and roll between your hands. Roll dough in powdered sugar then place on baking sheet.
- Bake for 10 minutes. Let cool slightly on baking sheet then transfer to a cooling rack.
- Once cooled, melt chocolate chips in microwave in :30 second increments, stirring after each :30 seconds. Place a dollop on each cookie then sprinkle crushed peppermint pieces on chocolate. Store in airtight container for a week.
