Roasted Red Pepper Mashed Potatoes

Traditional mashed potatoes get a little kick for a new Thanksgiving side dish – Roasted Red Pepper Mashed Potatoes.

Who’s already thinking about Thanksgiving dinner. I’ll admit it’s always on my mind because right up there with steak, BBQ and burgers, Thanksgiving dinner is my favorite. I will make turkey and dressing in some form in summer because I love it so much. These Roasted Red Pepper Mashed Potatoes are going to become a staple year-round.

Every year my mom makes a traditional feast but I always throw in a new side dish and dessert for our get together. But because of this here blog, I get to try out all sorts of new dishes for your feast and have Thanksgiving dinner for a couple of months prior to the big day. Lucky me!

This recipe was inspired by a luncheon I attended recently. While these may look like mashed sweet potatoes because of the color, they are actually russet potatoes with roasted red peppers. The taste of the peppers is subtle but just adds a new dimension to the dish.

How do you like you mashed potatoes? I like mine lumpy so if you are a super creamy person, by all means add in more peppers, butter and milk.

Ingredients

  • 1/4 c Roasted Red Peppers
  • 1 tsp minced garlic
  • 2 large russet potatoes, peeled and cut into large pieces
  • 1/4 c - 1/2 milk
  • 2 Tbsp butter
  • Salt and pepper, to taste

Instructions

  • In a large saucepan, add enough water to cover potatoes. Bring water to a boil on high heat and let cook until a fork goes into potatoes easily.
  • Place peppers and garlic in a blender and blend until smooth.
  • Drain potatoes. Add pepper purée, butter and about 1/4 c milk. Season with salt and pepper. Mash with a masher or mixer until you reach desired consistency. Add more butter and milk as needed to get to your liking. Season again with salt and pepper.
  • Optional: top with parsley and diced roasted red peppers.
