Banoffee Tarts – a simple bite size dessert made with bananas, dulce de leche, creamy topping and a touch of chocolate. Perfection in one bite.
A couple of weeks ago I helped host a baby shower, well really a sip and see for my cousin and her baby girl Ava Joyce. These Banoffee Tarts made an appearance and I will forever think of baby Ava whenever I eat them now. Oh my goodness, that baby girl is precious. She is such a quiet and inquisitive baby, I just wanted to scoop her up and bring her home with me. I offered babysitting services whenever I am in town but I haven’t been called yet.
My aunt was throwing the shower and I offered to help with some of the food. The morning of the shower I was at my mom’s house trying to get everything ready and just about everything seemed to go wrong. I was going to make strawberry cupcakes to keep with a pink theme and those suckers burned. I was going to salvage them and then my icing wouldn’t come together. Fail.
Is it only me who has a hard time baking/cooking at someone else’s house. I’m just so comfortable in my own kitchen and I never have exactly what I need in anyone else’s kitchen.
Not wanting to show up without another dessert, I had to come up with something quick so I went to Pinterest for inspiration and Banoffee kept popping up. I didn’t even know this was a thing! The majority of posts were for a pie but I knew I wanted to do something mini.
Off my mom and I went to the grocery store to gather the ingredients. These little bites of deliciousness were so dang easy to put together and were so tasty. My entire family loves dulce de leche as it’s something we had often growing up so to now be able to get it in a can is amazing to me.
The next time you need a dessert but don’t have a lot of time, grab the ingredients for these Banoffee tarts and get to eating. I’m leaving the amount of ingredients up to you because it depends on how many you want to make, and which brand of pastry shells you get.
