Do quesadillas count as tacos for Taco Tuesday? I’m going to say yes! Taco Tuesday has taken on a life of its own and everyone is united in having tacos every Tuesday.
Growing up, my momma always used to make tortillas melted with cheese in them for a snack. We didn’t call them quesadillas then, just cheese in a tortilla. These were a favorite snack but now that I’m older, I don’t make quesadillas nearly enough at home.
Lately I have been seeing so many advertisements for these meal delivery services – you know the kind where the ingredients are sent to you with a recipe and you make the meal at home. I have tried all the ones I can get for free or at a discount to try them out. This is intriguing to me so I had to try it.
So far I have tried Blue Apron, Hello Fresh, and Green Chef. My favorite of the three is Blue Apron because it used ingredients I enjoy and I found the meals easy and enjoyable.
One of the dishes was a Mexican Beef Quesadillas. I enjoyed them so much that I had to redo them to watch some playoff football. One thing Blue Apron added to the beef that was a surprise to me was ground cinnamon. The cinnamon is a jolt of surprise in the meat but I enjoyed it. Not everyone was a fan of that spice in the meat so I have put it as optional for you. Paired with a corn salsa, these are a perfect combination.
Mexican Beef Quesadillas

Ingredients
- 10 oz Ground Beef
- Salt and Black Pepper, to taste
- 1/4 tsp ground cumin
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp ground coriander
- Ground Cinnamon (optional)
- 2 Tbsp Tomato paste
- 1/2 c water
- Olive oil
- 2 ears of corn, cleaned and kernels cut from ears
- 2 Tbsp green bell pepper, diced
- 1 lime, zest and juice
- 4 Flour tortillas
- 1 c Mexican cheese, shredded
Instructions
- Add beef to a medium sauté pan. Season with salt and pepper. Crumble beef as it browns. Mix together remaining spices Once browned, add spice mixture to beef, tomato paste and water. Mix together to combine. If you would like to add ground cinnamon to the beef, sprinkle on a bit now and mix together. Cook until sauce thickens, about 6 minutes.
- Remove beef and drain on a paper towel covered plate. Clean sauté pan.
- Add about a teaspoon of olive oil to pan. Add corn and green beans and sauté with salt and pepper, to taste. Cook for about 5 minutes. Remove and add to a bowl. Add zest and lime juice to the corn mixture. Mix to combine.
- Add a drizzle of olive oil to pan and add one tortilla. Heat on one side for about :30 seconds. Flip tortilla over then add little bit of cheese to one side of tortilla. Top with beef and then more cheese. Fold over tortilla to make a sandwich. Press tortilla down to help melt cheese. Cook for about a minute then flip tortilla over to melt other side of cheese. (Use about 1/4 c of cheese per tortilla.)
- Cut tortilla into thirds and serve with corn salsa.
