When I lived in Washington, DC my friend Brady and I would take a break from work every day around 3 pm. We’d go down to the snack bar and he’d get ice cream and I would get a BLT. That Dorothy could make a mean BLT. She would slather mayonnaise on both pieces of bread and pile that sandwich high with bacon. That could also be why I gained so much weight while living there!
Recently on Instagram, I saw someone share a picture of their BLT Nachos that they got from one of the parks at Disney World. I knew I had to recreate it. And let me tell you, I am glad I did.
This was the perfect Sunday snack to watch the race on TV. The only thing it was missing was mayonnaise but that would just be weird.
* Notice I left the quantities up to you – this could easily be made for one or a crowd.
BLT Waffle Fry Nachos
Ingredients:
Crinkle cut fries
Bacon, cooked crispy and chopped
Cheddar cheese
Lettuce
Tomatoes, diced
Ranch dressing
Instructions:
Preheat oven to 425 degrees F.
Place fries on a baking sheet and bake for 22 minutes.
Take out of the oven and arrange on a cast iron skillet. Layer with fries and cheese. Place back in the oven and bake for 3-5 minutes, until cheese is melted.
Remove from oven and top with lettuce, bacon and tomatoes. Drizzle with ranch dressing.
