Mini Pumpkin Pies

Do you smell that? It’s pumpkin which means it is Fall. Once we start getting a nice breeze, I eat and/or bake everything pumpkin. Seriously. I seek out anything with pumpkin in it and try it. I draw the line at shampoo though.

Sprouts helped me out this year by sending me all these pumpkin goodies that they have in their store. Who knew there was so much pumpkin stuff out there? I love it! I had never had pumpkin flax granola before but now I am hooked. Pumpkin cookies? Yes, please.

Sprouts Pumpkin Items

I took the Pumpkin Snaps, think Ginger Snaps, and the organic pumpkin they sent and made these mini pumpkin pies. And you know me, I couldn’t make them mini without putting them in a mason jar lid. I love the mild flavor from both the crust and filling. Oh so delicious. The topping adds a bit of crunch so you can add it or leave it off and top with whipped topping.

Mini Pumpkin Pies

Ingredients:

Crust:
1 c pumpkin snaps, crushed into fine crumbs
4 Tbsp unsalted butter, melted

Filling:
1 egg
3/4 c Pure Pumpkin
1/3 c Whipping cream
1/4 c Light Brown sugar
1 Tbsp Light Corn syrup
1 Tbsp Maple Syrup
1 tsp Pumpkin spice
1/2 tsp Ground cinnamon
1 tsp Vanilla extract
1/8 tsp Salt

Topping:
1/2 c Chopped pecans
2 tsp Light brown sugar
1/2 tsp Ground cinnamon

Instructions:

Preheat oven to 350 degrees F.

Prepare baking sheet by adding twelve mason jar lids with metal inner lid facing up to sheet pan.

To make crust, mix melted butter with ginger snap crumbs. Place about one tablespoon mixture into each mason jar lid. Press down and up the sides to form a crust. Bake in the oven for 5 minutes.

To make filling, combine all ingredients in a medium mixing bowl. Whisk together until everything is incorporated. Divide mixture among the twelve mason jars. Place in the oven and bake for 35 minutes.

To make topping:

In a small mixing bowl, add pecans, brown sugar and cinnamon. Mix together to combine. Remove baking sheet from oven. Top pecan mixture over pumpkin filling then place in the oven and bake for an additional 10 minutes.

Remove mini pies from the oven and let cool.

NOTE: You can skip the pecan topping and replace with whipped topping.
