Peanut Butter Patties Stuffed Cookies

The first time I saw Picky-Palate’s Orea Stuffed Chocolate Chip Cookies I knew I wanted to try them. But time went by and I never had the chance to bake them. They just sat in the back of mind taunting me.

Then the Girl Scouts started selling their cookies and as soon as I saw the Girl Scouts Peanut Butter Patties I knew I had to stuff them in these cookies à la Picky Palate. I love Oreos but just the thought of peanut butter and chocolate inside a peanut butter and chocolate chip cookie – you can’t beat that.

One thing you may not know about me is I cannot have an opened box of Girl Scout cookies in the house. Seriously, if they are open I feel like I have to eat them.  It’s insane! I planned these cookies so that I could make them for my family on my next trip home. The night before I left, I dutifully made them and allowed myself to eat just half of one.

These cookies are HUGE! I adapted the recipe to cut it down to make 11 cookies (or 12 if you don’t over stuff like I did), added the chocolate and peanut butter chips combo – and of course the Girl Scout cookies. These are ridiculously good.  Thanks Jenny for creating these insane bites of deliciousness!

Peanut Butter Patties Stuffed Cookies

Peanut Butter Patties Stuffed Cookies (recipe adapted from Picky Palate)

Ingredients:

1 stick softened butter
1/3 c light brown sugar, packed
1/2 c sugar
1 large egg
1 1/2 tsp vanilla extract
1 3/4 c all purpose flour
1/2 tsp kosher salt
1/2 tsp baking soda
1 1/4 c peanut butter & chocolate chip morsels
11 (or 12) Girl Scout Peanut Butter Patties

Instructions:

Preheat oven to 350 degrees F.

Prepare baking pan by adding parchment paper to two cookie sheets.

Add butter and sugars to a large mixing bowl. Using an electric mixer, beat until well combined. Add egg and vanilla to mixture and continue mixing until combined.

Using a separate mixing bowl, pour in flour, salt and baking soda. Whisk together to combine.

Gradually add in the flour mixture to the wet mixture. Mix to combine.

Add the chips and fold in to the dough or mix with the mixer to combine.

Use a Cookie Scoop to form two balls of dough on the bottom and top of the cookie. Form the dough to cover the cookie completely.

Place cookies on parchment covered baking sheets and bake for 13-15 minutes or until cookies are baked to your liking.
