Growing up, one of our favorite snack treats was cheese melted in a tortilla. Nothing else. Just plain cheese from the block sliced and slipped into a tortilla and heated right on the gas range.
Nowadays one of my favorite ways to eat cheese is as Queso Fundido. The first time I had this oh so scrumptious treat was when I was out with a couple of friends for happy hour. We had this sizzling cheese right out of the oven delivered to us and we gobbled that dish up! Ever since then I’ve been making it at home and it is one of my favorite appetizers.
You can have it with either chips or tortillas but I like it best slathered on a warm tortilla then rolled up. Now I’m hungry for another bite.

Ingredients:
1 c Cacique Quesadilla Cheese, shredded
1 c Ranchero Queso Fresco Cheese, shredded
1 link Pork Chorizo
1 tsp olive oil
Flour tortillas or Tortilla chips
Pam cooking spray
Instructions:
Preheat oven to 400 degrees. Spray two oven safe small baking dishes with Pam cooking spray.
In a medium sauté pan, heat olive oil. Add chorizo to pan and crumble. Cook for 5-7 minutes until done.
Divide Queso Fresco among both baking dishes. Add about 1/4 of chorizo to each dish. Finish by topping both dishes with Quesadilla cheese.
Place in the oven for 10-12 minutes or until melted. Remove from oven and top with remaining chorizo.
Serve warm on tortillas or with chips.
