You know those times when you just want a good comfort meal? Well, that happens to me, a lot, and this past weekend was no exception. After the horrific events of the week prior I just needed a little comfort.
Never in my wildest dreams did I ever think meatloaf would fit that bill for me but it does. It’s just a traditional meal and invokes that family feeling when mentioned. It also tastes pretty darn good!
I had never made meatloaf with crackers before but I do enjoy trying new ways to make it so I gave this a shot. It was very tasty, comforting and traditional in flavor. Something The Beaver’s mom would have made. And when my mom goes for seconds, I know it’s good. Give it a try for your next comfort meal.
Easy Meatloaf (recipe slightly adapted from AllRecipes)
Ingredients:
1 1/2 pounds lean ground beef
1 tsp onion powder
1 tsp garlic salt
Salt and pepper, to taste
1 egg
1 c milk
1 cup Saltine crackers, crumbled (about 20 crackers)
Topping:
2 Tbsp light brown sugar
2 Tbsp yellow mustard
1/3 c ketchup
1 tsp Worcestershire sauce
Instructions:
Preheat oven to 350 degrees F.
In a large bowl, add all ingredients. Using your hands, mix to combine.
Prepare a 5×9 loaf pan by spraying with Pam cooking spray. If you don’t have a loaf pan, you can use a baking dish and just form into a loaf.
Add meat mixture to the pan.
In a small bowl, add the topping ingredients and whisk to combine. Drizzle on top and to the sides of the meatloaf form.
Bake for 1 hour. Enjoy!
