Stovetop Meatloaf Muffins

Growing up I don’t remember having meatloaf. In fact I have an aunt who makes it but I never wanted to try it. Then I started this blog and decided to give it a try and I have been a fan ever since.

There are several different versions out there but this one may be the easiest I’ve seen. It comes from the Weight Watchers Message board which has been a good source of recipes for me.

I added some green peppers and while I enjoyed them, my nephew did not. It made them a little hot for him. So, depending on your heat level, put them in or take them out. Another adaptation was to add a sauce to them. These are now a favorite of mine.

Stovetop Meatloaf Muffins

Ingredients:

1 lb. Lean ground beef
1 box Stovetop Herb Stuffing
1 c water
2 egg whites
2 Tbsp green peppers, finely diced

Sauce:

1/3 c Ketchup
4 Tbsp BBQ sauce
2 tsp Worcestershire sauce

Instructions:

Preheat oven to 350 degrees Fahrenheit.

In a large bowl mix together beef, stuffing, water, egg whites and green peppers. Using your hands, mix the ingredients together until combined.

Spray a 12-count muffin tin with Pam spray. Using a cookie scoop, add beef mixture to the tins and press down.

In a small bowl, whisk together the sauce ingredients. Drizzle the sauce evenly over the muffins.

Place muffin tin in oven and bake for 35-40 minutes.

Serve over mashed potatoes.

    I love this idea - my only problem with meatloaf is portion control! Mmmmm!
