Do you love sweet potatoes as much as I do? They are so versatile and work so well with many different spices and flavors. My go-to flavor with them is usually maple syrup and maybe some cinnamon or brown sugar.
But when I recently saw a recipe from one of my favorite romance authors, Susan Elizabeth Phillips, for Maple Lemon Sweet Potatoes, I was intrigued. How would this taste? Would the lemon overpower the maple syrup?
I gave them a try and they were refreshing. The lemon juice gave them a fresh taste and was perfect for this warmer weather we are having. The lemon did overpower the maple syrup a bit but it worked for this dish. And it went well with my light waffles and chicken plate.
Maple Lemon Sweet Potatoes
Ingredients:
2 large sweet potatoes, peeled and cut in 1 1/2 chunks
1 Tbsp olive oil
Salt and freshly ground pepper, to taste
2 Tbsp pure maple syrup
3 Tbsp freshly squeezed lemon juice, about 1/2 lemon
Instructions:
Preheat oven to 375 degrees Fahrenheit.
In a large bowl add potatoes. Drizzle olive oil over potatoes and toss to coat. Season liberally with salt and pepper.
Place potatoes on a foil-lined baking sheet. Bake for 25-30 minutes.
In a small bowl, add maple syrup and lemon juice together.
Take potatoes out of oven. Pour half of the juice mixture over the baked sweet potatoes. Place back in the oven and cook for an additional 15 minutes.
Pour remaining juice mixture over potatoes before serving.
