Last week I started Weight Watchers again so I’m trying to find new, healthy things to eat so I don’t fall in a trap of eating the same thing over and over.
One thing we love at my house is tacos. But I’ll be honest with you in that our taco shells are usually dripping in grease. I made them as Oven Baked Tacos recently and loved them that way but wanted something even healthier.
Enter lettuce. Its large leaves makes the perfect taco shell and has 0 – zero Weight Watchers points. Score!
I added beans and corn to make them have more substance. You could also make these using a taco seasoning packet and with other types of lettuce. They were delicious and I can’t wait to take some to work for lunch.
Taco Lettuce Wraps
Ingredients:
1 lb ground beef
McCormick hamburger grill mates seasoning
Iceberg Lettuce, large leaves
Pinto beans
Kernel corn
Tomatoes, diced
4 Cheese Mexican blend
Instructions:
In a large sauté pan, brown meat. Add seasonings and cook until done. Remove from heat and drain grease.
Heat pinto beans and corn to your liking. (I just heat mine up on the stovetop but you can also use the microwave.)
Remove large leaves from lettuce and rinse to clean. Dry leaves. Add beef to lettuce leaves. Top with beans. Sprinkle with cheese and tomatoes. Top with corn.
Eat as you would a taco.
