I made this to watch the last NASCAR race of the 2012 season. The added texture from the cream cheese and spinach earned two thumbs up from everyone on this dish. Add to that you throw all the ingredients in a slow cooker and let it work its magic.

Hot Spinach Queso Dip (Slightly adapted from Haystacks and Champagne)
Ingredients:
10 oz frozen chopped spinach, thawed and drained
1 lb 2% Velveeta cheese, cubed
8 oz Onion & Chive cream cheese
1 can original Rotel tomatoes
Instructions:
Add all ingredients to crock pot. Mix together as best you can. Cook on high heat, stirring occasionally, for 30 minutes. Turn to low heat and finish cooking for 30 minutes. Serve warm with tortilla chips.
