On Christmas Eve, I woke up with the need to bake more cookies. Every year it seems I feel the need to bake more cookies. My dad is my biggest fan when it comes to my cooking and baking so I think I do it all to see the smile on his face.
These cookies I saw on Pinterest and they were simple and cute so I couldn’t help but want to make them. They came out greener than I had anticipated.
According to my niece, they look like they are made for the musical Wicked rather than for the Grinch. They have a nice chocolate chip cookie vibe to them and we all enjoyed them. Plus they went with the homemade peppermint stick plate perfectly!
Grinch Cookies
(Recipe slightly adapted from Crafty Corner)
Ingredients:
2 3/4 c flour
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 cup butter, room temperature
1 1/2 c sugar
1 egg
1 tsp peppermint extract
Kelly green food coloring gel
1 bag of Andes baking chips
Instructions:
Preheat oven 375 degrees.
In a medium bowl, whisk together flour, baking soda, baking powder and salt. In a large bowl, add butter and sugar and beat until creamed. Add egg and peppermint extract and mix until combined. Gradually add in the flour mixture.
Add in green food coloring and beat with the mixer until all the dough is green. (Take my advice and add in a little bit of the gel or drops. You can always add but you can’t take away.)
Fold in the Andes chips. Cover and chill in the refrigerator for a few minutes.
Using a cookie scoop, form balls of dough and place them on the cookie sheets. Cook for 10-12 minutes.
Makes about 4 dozen cookies.
