Every year my mom makes her Jello Green Salad which also happens to be one of my favorite desserts. But I’ve always wanted to try making Ambrosia because it seems a lot of people have it for their holiday meals.I actually had some from Randall’s grocery store this year and thoroughly enjoyed it. So off I went in search of a recipe to try.
Alton Brown came through once again with a simple recipe. I made this on Christmas Day but forgot to bring it out so we had it with leftovers. It was a hit so I think I’ve added to my must have desserts at Christmas.
Ingredients:
1/2 c heavy cream
1 Tbsp sugar
4 oz light sour cream
3 c mini marshmallows
1 c mandarin oranges, drained
1 c pineapple chunks, drained
1 c shredded coconut
1 c chopped pecans
1/2 cup drained Maraschino cherries
Instructions:
In a large bowl, add the cream and sugar and using a mixer with a whisk attachment, whisk until stiff peaks are formed. Add sour cream and whisk to combine.
Mix in the marshmallows, oranges, pineapple, coconut, pecans and cherries. Stir together to combine.
Transfer to a glass serving bowl. Cover and place in refrigerator for 2 hours before serving.
