Back when I worked for the Congressman, part of my job was being out in the community. This part I loved because I got to spend time with a lot of great people. One group that I got to know were the women of the Bluebonnet Club. This group of ladies did a lot of volunteer work.
At the time, they raised money for the club by having a craft sale and baking items. One dish that sticks out in my mind was their taco salad. Oh it was so good. Here is a take on that salad as I remember it, with my alterations, of course.
Doritos Taco Salad
Ingredients:
1 lb lean ground beef
1 package Taco seasoning mix
1 can red kidney beans, drained and rinsed
1 package lettuce spring mix
5 grape tomatoes, diced
1/2 c shredded Cheddar cheese
1/2 bag Nacho cheese Doritos, crushed into bite size pieces
1/2 c Catalina salad dressing
1/2 c Thousand Island dressing
Instructions:
In a large pan, brown ground beef and prepare according to taco mix instructions.
Once beef is completed, take off the heat and add drained beans. Set aside.
Place cleaned lettuce into a large bowl. Add tomatoes, cheese, beef and beans to lettuce. Mix completely. Refrigerate until ready to serve or until cooled.
Mix Catalina and Thousand Island dressings together. (You may need to use entire bottle depending on how much dressing you like on your salad.)
Add crushed Doritos to salad. (You can use entire bag if you really like Doritos.) Pour dressing on top and mix thoroughly. Serve and enjoy.
