The Super Bowl kind of snuck up on me this year. I usually like to plan ahead what our meal will be but this year it was Saturday evening and I was still trying to decide what to make. There was a reference to chicken bacon wraps on Facebook and I had seen these already on Pinterest so on the list to try they went.
I was a little leery on what this would taste like but I knew Paula Deen wouldn’t let me down. They were delicious little morsels. My dad even requested to take some to work for his lunch today which is a win!
Give them a try. They can also be made without the brown sugar mix but why would you want to?
Sweet Chicken Bacon Wraps
(Recipe slightly adapted from Paula Deen)
Ingredients:
1 lb. chicken tenderloins, cut into 1 inch chunks
1 lb. package sliced bacon, cut into thirds
Salt and pepper to taste
2/3 cup firmly packed brown sugar
1 Tbsp chili powder
Wooden toothpicks
Instructions:
Preheat oven to 350 degrees F.
Season chicken with salt and pepper. Wrap chicken with a cut slice of bacon and secure with a toothpick. Mix together brown sugar and chili powder then dip the chicken and bacon in mixture. Sprinkle mixture all around wrap to ensure a proper coating.
Spray a rack and broiler pan with nonstick cooking spray. Place chicken wrap on rack in broiler pan. Bake at 350 for 40 mins. (Note: I baked the last 10 minutes or so at 400 degrees to ensure crispy bacon)
