Steak Salad alá Saltgrass

Not too long ago I went to dinner at the Saltgrass Steakhouse with my sister and her family and had this awesome steak salad for dinner. As soon as I had it I knew it was one of those dishes I would recreate at home. It definitely didn’t disappoint and was so quick to put together. I served it to my parents and they both loved it – Dad even went back for seconds which is high praise indeed.

Steak Salad alá Saltgrass
Saltgrass Steak Salad

Ingredients:

Mixed greens
3 tomatoes, diced
4 red potatoes, diced
1/2 lb fresh green beans
4 hard boiled eggs, diced
Prepackaged grilled strips of steak (fajitas package)

For Balsamic vinaigrette dressing (recipe adapted from Oprah.com)

1 1/2 Tbsp balsamic vinegar
1/2 Tbsp red wine vinegar
1/2 tsp Dijon mustard
1/2 tsp minced garlic
1/2 cup olive oil
Salt and freshly ground pepper, to taste

Instructions:

For dressing:

Combine all ingredients for the vinaigrette and whisk well. Place in refrigerator.

For salad:

Fill a large pot with water and bring to a boil. Add potatoes and cook for 20 minutes or until potatoes are fork tender. Drain and season with salt and pepper. Let cool.

Cook green beans according to package instructions. (this is usually done by poking holes in the package and steaming in the microwave for 5 mins., or use a Ziploc steam bag)

Heat steak strips according to package instructions. (this is usually done by heating the meat in a skillet on the stove for 5 mins.)

Add mixed greens, potatoes, green beans, tomatoes and steak together. Mix well to combine. Add vinaigrette and toss to coat. Add hard boiled eggs. Serve immediately.

    This was wonderful, thank you. My only suggestion is to add Blue Cheese, like Salt Grass does.

      Thanks Cindy. I'm not a big Blue Cheese fan but today I tried a Blue Cheese Fondue that might have converted me.

    When I first had Saltgrass steak salad it had the following items: Asparagus, black olives, potatoes, tomatoes, eggs. Later they switched out the asparagus for green beans.

      Ooh I’m glad they switched it. I’m not a fan of asparagus but I love green beans.
