Being on Weight Watchers you wouldn’t think chicken fried steak would be on the menu. Well you’d be wrong. This little ditty comes straight from the Weight Watchers website (well, adapted by me, of course) and was so good. I’m not very good at making gravy so anytime I can practice it I’m happy. This one had way too many onions so I’d cut back on those next time. But the rest of the meal was delicious and the best kind of comfort food without any of the guilt.

Chicken-Fried Steak (recipe adapted from Weight Watchers)
Ingredients:
9 oz lean cubed steak
1/4 cup all-purpose flour
Salt and pepper, to taste
1 1/4 cup 2% milk, divided
1 large egg white
1 cup Panko breadcrumbs (I didn’t have non-seasoned dried breadcrumbs other than Panko)
2 Tbsp olive oil
1/4 cup, onion, chopped
Instructions:
Combine flour and season with salt and pepper. Combine 1/4 cup of milk and egg white in a shallow bowl and whisk together. Place bread crumbs on another plate.
Dip a piece of steak in flour mixture; turn to coat both sides. Next, dip steak in milk mixture; turn to coat both sides. Lastly, dip steak in bread crumbs; turn to coat both sides and set aside. Repeat with remaining pieces of steak; reserve 1 tablespoon of leftover flour.
In a large nonstick skillet, over medium heat, add olive oil. Add steaks to skillet and place over medium-high heat. Cook about 5-7 minutes per side or to desired degree of doneness. Remove steaks and set aside.
Over medium heat add, onion and cook until tender, stirring occasionally, about 4 minutes. Add reserved tablespoon of flour; cook, stirring constantly, for 1 minute. Pour in remaining cup of milk, scraping up any browned bits with a wooden spoon. Reduce heat to medium-low; add salt and pepper, to taste. Increase heat to medium and cook until gravy is thickened, stirring constantly, about 1 to 3 minutes. Spoon gravy over steaks and serve immediately.
Garlic Mashed Red Potatoes (recipe adapted from Weight Watchers)
Ingredients:
2 large uncooked red potatoes, cut into 2-inch chunks
1 tsp minced garlic
1/4 cup 2% milk
1 Tbsp chives, minced
Salt and pepper, to taste
Instructions:
Combine potatoes and garlic in a large saucepan and pour in enough water to cover; set pan over high heat and bring to a boil. Reduce heat slightly and boil until potatoes are fork tender, about 12 minutes; drain water from saucepan.
Add milk and chives to potatoes and mix until combined. Mash mixture with a potato masher until smooth, season to taste with salt and pepper.
