When we were growing up, my mom would always make us tortillas with cheese, folded over and heated up over a flame. Until I was an adult I had no idea these were what people referred to as quesadillas. To me this was just a tortilla with cheese. Having had them all my life, I was never one to want to try them in all the restaurants serving them. But when I wanted something different for breakfast, a quesadilla was at the top of the list of things to try. Next time I will just use one tortilla and fold it over like mom used to do but as is, it was tasty but too much for one person.

Ingredients:
1 egg
1 egg white
1 Tbsp 2% milk
2 flour tortillas
1/2 lb pork sausage
2 Tbsp diced green pepper
Grape tomatoes, diced
1/4 c Mild cheddar cheese, shredded
1/4 c Parmesan cheese, shredded
Salt and pepper to taste
Instructions:
In a sauté pan over medium heat, brown sausage. Beat together eggs with milk. Season with salt and pepper. Once meat is browned, add eggs and green peppers. Mix well so eggs are scrambled and mixed well with sausage and peppers. Cook until eggs are cooked. Add tomatoes. Cook for 2 additional minutes.
Warm up tortillas over a low flame (this is to get the side that won’t touch the skillet warm). Add egg mixture to top of tortilla. Add cheese over eggs then place remaining tortilla on top. Heat in the skillet over medium-high heat. Carefully flip over to heat other side.
Serve with skillet fried potatoes.
