Meatloaf Muffins and Smashed Parmesan Potatoes

This is the second meatloaf recipe that I have tried and I really liked it. I’ve seen this recipe on the Weight Watchers Message Board several times and am so glad I finally tried it. Sydni helped me — ok she did all of it except putting it in the oven. Such a good little helper.

The potatoes are a Giada recipe that someone from the WWMB shared with me when I put in a request for new potato recipes.

Meatloaf Muffins

Ingredients:

1 pound ground turkey breast or ground beef (I used lean beef)
2 egg whites
1 medium onion, finely chopped (I left the onions out)
1/4 cup ketchup
1 Tbsp Worcestershire sauce
1 tsp table salt
1 tsp black pepper
1 Tbsp garlic powder
1 cup fresh bread crumbs

Instructions:

Put all the other ingredients in a large bowl and mix well, then add bread crumbs and mix all together, (may have to use hands to mix). Put into a 12 cup muffin tin that is sprayed with pam, fill almost to top. Bake in preheated 350 degree oven for 30 – 35 minutes or until done. Let stand 5 minutes then remove one at a time to serving plate.

Smashed Parmesan Potatoes

Ingredients:

3 pounds baby red-skinned potatoes, unpeeled, halved
2/3 cup freshly grated Parmesan
1/2 cup olive oil
Salt and freshly ground black pepper

Instructions:

Combine the potatoes in a large pot of water. Cover and bring the water to a boil. Continue boiling until the potatoes are tender, about 15 minutes. Drain, reserving 3/4 cup of the cooking liquid. Return the potatoes to the pot. Coarsely mash the potatoes, adding enough reserved cooking liquid to moisten. Using a large fork, stir in the Parmesan and the oil. Season the potatoes, to taste, with salt and pepper and serve.
