Beto’s German Pancakes are the perfect finger food for breakfast or dessert. Top them with all your favorite sweet or savory toppings.
Last year, Beto O’Rourke (you guys know Beto right?) made these German Pancakes on his Instagram page and I knew I had to make them. His live video showed just how simple they were to make and I knew my own version of Beto’s German Pancakes would make an appearance here. I made a similar full size version of a Dutch Baby Pancake after my trip to New York city but I was intrigued by the mini version. Since Beto’s video, I have made these a few times for my niece and she loves them. I think her favorite thing is that she can top them with her all the things so there are a lot of options. For me, Nutella is always a plus on top of almost anything. Bananas and strawberries are also my go to toppings. Duh. I even made them for her when I couldn’t eat anything due to a medical procedure. Now that was hard!
This recipe is super quick to make and would be great to prepare for a get together. Just make the pancakes ahead of time and have an array of toppings for your guests to put together their own German Pancakes. It’s perfect for a Valentine’s breakfast in bed or even a Galentines celebration. Mother’s Day will be here before you know it so this would be perfect for mom too! I think one reason I also like making these is because I get to use one of my favorite kitchen tools – the OXO dusting wand for getting the confectioners sugar on these babies. You can go simple and just top them with a drizzle of lemon juice and confectioners sugar like Beto and his family did or go crazy with the toppings. I also had some with a homemade raspberry jam and they were delish. That recipe for the jam will come soon. Enjoy!
Beto’s German Pancakes
Yields 12 pancakes

Ingredients
- 4 Tbsp butter
- 1/2 c flour
- 1/2 c milk
- 2 slightly beaten eggs
- 2 tsp sugar
- 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
- Toppings optional:
- lemon (squeeze juice on top)
- confectioners sugar
- Nutella
- Bananas
- Strawberries
- Whipped Cream
Instructions
- Preheat oven to 425 degrees.
- Divide butter among a 12 count muffin tin.
- Mix together flour and milk until combined. Add in eggs, sugar, cinnamon and vanilla extract.
- Evenly divide mixture among the 12 muffin tins.
- Place tin in oven and bake for 15-17 minutes. Pancakes will deflate as they cool.
- Squeeze lemon juice over the pancakes then sprinkle with confectioners sugar. Use your favorite toppings too.
