Can you believe summer is quickly coming to an end. I mean seriously, it’s the beginning of August already. In two months we’ll be eating all the pumpkin stuff. And don’t read that as if it’s a bad thing. I’m totally ready for cooler weather and pumpkin stuff. But what I’m going to take advantage of for the rest of summer is fruit and all it’s gloriousness starting with this Watermelon Pizza.
I have been wanting to make a cookie pizza for a while now. You know, the cookie made into a big round pizza base then topped with a sweet cream cheese spread and topped with fruit. But then I remembered that I’m trying to eat healthier and less carbs so I compromised and put the “cookie” pizza on watermelon. Oh yes I did. This sweet watermelon pizza still has that yummy cream cheese base but I also had some Cool Whip in the fridge so I used some of that too. With a dusting of Tajín. Mmmhmmm.
Are you a fan of Tajin? Do you know what it is? It is a spice blend mixture that is popular in Latin cultures. Tajin is one of those things I did not grow up using. You know all those fruit cups sprinkled with Tajin? Yeah, we didn’t grow up on that. But now I have a jar in my pantry and I love using it on fruit like this. What else have I been missing out on?
I loved everything about this little treat. Well, except for the way I cannot cut watermelon straight. Have never been able to in all my life. Kind of like how I can’t make tortillas round either. {face palm} This would be perfect for any upcoming pool parties or barbecue’s. Or just because. Enjoy the last days of summer folks.
Watermelon Pizza
Watermelon Pizza is a refreshing way to serve fruit at your summer gatherings. Complete with a sweet cream cheese base and topped with Tajin or Balsamic Glaze.

Ingredients
- 4 oz cream cheese, softened
- 2 Tbsp powdered sugar
- 1/2 tsp vanilla extract
- Watermelon
- Cool whip
- Tajin
- Blueberries
- Pineapple
- Peaches
- Strawberries
- Mint (for garnish)
- Optional sauce:
- Balsamic Glaze or
- 2 Tbsp Balsamic Vinegar
- 2 Tbsp Honey
Instructions
- In a medium bowl, with an electric mixer cream together cream cheese, sugar and vanilla extract.
- Cut watermelon into large circles and remove any seeds. Cut into pizza slices.
- Top with cream cheese mixture or cool whip. Top with fruit of choice.
- Sprinkle with Tajin or drizzle with Balsamic Glaze. You can make a quick Glaze by combing Balsamic Vinegar and honey and whisking together.
