Strawberry & Chicken Salad with a Glucerna® Hunger Smart™ Shakes

Going to the doctor is never fun. And it’s especially not fun when you are told you are pre-diabetic. It will make you change your lifestyle pretty darn quick.

That happened to me last year. With my mom, dad, sister, numerous aunts and uncles all having diabetes, I knew to take the doctors warnings seriously. I’ve been watching what I eat a little more closely ever since. Since the beginning of the year I’ve lost 23 pounds. It might not seem like a lot, but to me it is and it means that the changes I am making are sticking. But there are times when I just feel hungry. Even hangry. If I get in a foul mood quickly, my mom  will ask me if I’ve eaten or if I want to check my sugar. She knows the signs and what to look for as they pertain to me. So, before that happens I try to control my hunger by having a Glucerna® Hunger Smart™ Shake.

With 15 grams of protein and 6 grams of sugar in each shake, it helps me manage my hunger and helps minimize blood sugar spikes. I’m always trying to find ways to help my parents manage their hunger during the day as well and I know these Glucerna® Hunger Smart™ Shakes are exactly what they need to help them. I usually have a shake with a healthy salad while sitting at my desk at work.

This Strawberry & Chicken Salad is one I have been making for a while. It’s one that I used to get at my favorite lunch time spot but since I’ve moved jobs, I no longer can just run up the road to get it. So I made my own. It’s super simple and super healthy for you. I like to make a few for the week and keep them in mason jars so I can quickly grab a salad and a shake as I’m walking out the door.

Strawberry & Chicken Salad

Ingredients:

Spring Mix Salad
Strawberries, sliced
Blackberries (or Blueberries)
Mandarin Oranges
Pecan halves
Chicken tenderloins
Balsamic Vinegar
Olive Oil
Salt and pepper, to taste

For Dressing:
1 1/2 Tbsp Balsamic Vinegar
3 Tbsp Olive Oil
1 tsp Dijon Mustard
1/8 tsp salt
1/8 tsp pepper

Instructions:

Begin by placing chicken pieces in a Ziploc bag. Add equal amounts Balsamic vinegar and Olive oil to the bag. Mix around to ensure all pieces of chicken are covered. Place in refrigerator and marinate for 30 minutes – 2 hours. When ready to grill, season with salt and pepper and grill until cooked thoroughly.

Prepare the salad by adding lettuce mix, fruit and pecan halves to a salad bowl. Slice chicken and add to the salad.

Prepare the salad dressing by adding all dressing ingredients to a small mason jar. Cover jar tight with lid and shake to combine.
