When I was little, my Dad would always make these little Salmon croquettes for us to eat. I loved those little patties so much. They weren’t anything fancy but it was comfort food to me.
When I was trying to come up with ideas for Thanksgiving leftovers, my mind went to those little patties my Dad made. And, boy am I ever glad I made them.
To say these were a favorite with my friends is an understatement. I think they’ll all be putting this together for their families after the holidays.
Try this easy, delicious take on Thanksgiving leftovers.
Turkey and Dressing Croquettes
Ingredients:
1 c roast turkey, cut in small pieces
1 c cornbread dressing
1/2 c mashed potatoes
1 egg
1/2 c Panko breadcrumbs
2 Tbsp Canola oil
Instructions:
Add canola oil to cast iron skillet. Turn to medium high heat and let heat up.
In a mixing bowl, add all remaining ingredients. Mix with your hands to ensure everything is thoroughly mixed.
Divide up mixture and form into eight balls. Roll them into balls then place between palms and smash down to make a patty.
Once oil is hot, carefully add two patties at a time to skillet. Cook until the bottom is brown and crisp then flip over. Cook until brown and crisp. Remove to a plate covered in paper towels and let drain.
Serve with cranberry sauce.
