I’ve got a confession to make. I’m addicted to cookbooks. Ok technically I’m crazy for all books. I have probably a thousand in my place and storage combined. No joke. And that’s not counting my e-books that I’ve bought over the years.
If I hadn’t purchased all these books I probably would have a house in Tuscany by now. Or have spent that money on something else. Le sigh.
But back to my obsession with cookbooks. I love getting cookbooks and always want to buy all the ones I see. So I was super excited when I was offered a copy of Jackie Garwin’s new cookbook, Biscuits: Sweet and Savory Southern Recipes for the All-American Kitchen. This book has recipes and tips you need to make the perfect biscuit. It not only has biscuits, but other dishes that incorporate biscuit dough in the recipes too.
When I saw the recipe for a pizza baked in a Cast-Iron Skillet, I was sold. I love my skillet and love pizza. Winner winner pizza dinner.
While I was making this, I kept thinking of that Domino’s app the kids played for a while – you had to make a pizza in record time. Playing that game helped me make a pretty pizza!

Skillet Pepperoni Pizza
(recipe from Syrup and Biscuits)
Ingredients:
1/2 c pizza sauce
2 c grated Mozzarella cheese
3-4 oz Pepperoni slices
Grated Parmesan cheese
Dough:
2 c self rising flour
1/2 (or 1) tsp dried Italian seasoning
1 tsp garlic powder
4 Tbsp unsalted butter
1 c buttermilk
Olive oil
Instructions:
Preheat oven to 450 degrees.
To make the dough:
Using a medium mixing bowl, add flour, Italian seasoning and garlic powder. Mix together. Add in butter and cut in until it resolves coarse meal. Gradually add in buttermilk and stir until dough is wet.
Flour your surface and place dough on top. Sprinkle with flour and knead, adding more flour as needed, until flour is no longer sticky.
Drizzle about a teaspoon of olive oil in a 12-inch Cast-Iron Skillet. Spread around to cover pan. Place dough in oiled pan. Drizzle more olive oil on dough. With your fingers, work dough around and up the pan. Place in the oven and cook for 5 minutes.
Take pizza out and spread pizza sauce over dough. Cover with Mozzarella cheese then pepperoni. Cook for additional 15 minutes.
Place Parmesan cheese over pizza and if you like, bake for an additional 5 minutes to melt or leave as is.
