Rocky Road Fudge Squares

Rocky road has always been in my top five ice cream flavors. But it is cold here in these parts nowadays and ice cream isn’t the first thing that comes to mind. But melted chocolate over marshmallows and peanuts, now that I could have every day.

I’m not a real fudge lover but this little recipe here incorporates peanut butter and chocolate which are two of my favorite pairings ever. The saltiness of the pretzels and peanuts with the gooey-ness of the marshmallows just take this over the top.

Mix up a batch and give to family and friends for a Christmas treat. They’ll thank you for it.

Rocky Road Fudge Squares

Ingredients:

1 – 10.5 oz bag miniature marshmallows
1 – 6 oz container salted peanuts
About 1 cup pretzel sticks, broken in half
1 – 12 oz bag mini semi-sweet chocolate chips
1 c butter
1 c creamy peanut butter

Instructions:

Prepare 13×9 baking pan by lining with foil.

Place marshmallows, peanuts and pretzels in the pan. Mix all together so it is evenly distributed.

In a medium saucepan, melt chocolate, butter and peanut butter until creamy and thoroughly mixed.

Pour chocolate mixture over marshmallows, peanuts and pretzels. Stir to ensure everything is coated. Really get up under those marshmallows so they are all coated.

Place in the refrigerator and let set overnight. Once set, you can lift out of the pan and cut into squares.

Store remaining squares in the refrigerator in an air tight container.
