Zucchini Noodles and Shrimp

The last visit with the doctor, she instructed me that I needed to curb my carbohydrates and processed foods intake. I’m not going to lie folks. This is hard. So hard, but I am working on it.

Being a carb addict, I honestly didn’t think I could do it. But this is the second week and while I have cheated here and there, I am doing good, I think. The hardest part is not having bread or potatoes. Or sweet corn. Oh how I miss sweet corn. I used to grab deli ham for lunch but then realized that was on my do not eat list. Needless to say, I’ll be trying new foods, ones I previously thought I’d never try, and sharing them all with you.

The vegetables I do love the most, besides the ones I can’t have, are zucchini and squash. But I can only eat zucchini and squash roasted or grilled so many times. When I saw on Pinterest people making noodles out of them, I utilized my Amazon Prime and got myself a Veggetti Spiral Vegetable Slicer. I couldn’t wait to try it out.

And you know what? I loved it!  This little contraption is so easy to use too. Try it to change things up a bit. It will give your vegetables new life.

Zucchini Noodles and Shrimp

Zucchini Noodles and Shrimp

Ingredients:

1 Tbsp butter
1/2 lb shrimp, peeled and deveined
Italian seasoning
Salt and pepper, to taste
1 Zucchini
1 Yellow Squash

Instructions:

Wash and dry the zucchini and squash. Use the spiral slicer and make noodles out of the zucchini and squash. Season with Italian Seasoning , salt and pepper.

In a medium sauté pan, melt butter. Season shrimp with Italian seasoning, salt and pepper.

Add shrimp to pan. Cook for about two minutes then flip shrimp. Cook an additional minute. Remove shrimp from pan and set aside.

Add noodles to pan and toss around. Cook for 3-5 minutes, stirring occasionally. Add shrimp to pan and cook for an additional two minutes. Enjoy!
