You know how sometimes you see something and you just have to have it? That happened to me a couple of weekends ago when I found some great looking strawberries at the grocery store. I immediately knew I needed to make something with them.
One thing my niece always loves is chocolate covered strawberries. While I love strawberries and cream. With cake. So I came up with a trifle incorporating both our favorites into a simple dessert.
And with my fascination with mason jars, you know I had to stuff this dessert in a few of the small ones. It is the perfect size dessert. And you won’t feel guilty if you have two. Well, not too much. This recipe is just in time for you to make it for Mother’s Day. The whole family will love it.
Hamilton Beach has been generous enough to give away a Soft Scrape 6 Speed hand mixer and a 6 Speed Stand Mixer to two of my readers. I used the Soft Scrape mixer to mix up the cream cheese mixture for this dessert and the mixer worked great! I absolutely love that the attachments are easily stored in a container that the mixer sits on top which is great for someone like me who is always misplacing my beaters. I’ll be using the stand mixer this week as I prepare desserts for my family for Mother’s Day.
Chocolate & Strawberry Shortcake Trifle
Ingredients:
6 slices Pound cake
1 pint Strawberries, quartered with stems cut off
8 oz Cream cheese, softened
1/2 c Sugar
1/2 c Whipping cream
1 tsp vanilla
1/3 c Jif chocolate and peanut butter whipped spread
2/3 c Cool whip
Instructions:
In a medium mixing bowl, add cream cheese and sugar. Mix together with an electric mixer until creamy.
Add vanilla and whipping cream to the cream cheese mixture. Continue to mix together until it is mixed completely. Set aside.
In a separate mixing bowl, add the Jif spread and gently fold in the Cool Whip. Set aside.
Cut the pound cake slices into bite size pieces. Divide evenly and place on the bottom of 12 mason jars.
Place a dollop of the cream on top of the pound cake and spread around.
Top with the cut strawberries, about four pieces per jar.
Place a dollop of the chocolate mixture on top. Add a full or cut strawberry as a garnish.
Serve immediately or keep refrigerated.
