I love pie. All pies. But I have never gotten the hang of making my own pie dough. Especially not when there is a great one all ready for you to use.
Last year started my obsession with mason jars. They are just too cute for words. I have several that I have painted and I’ve even baked a chicken pot pie in some.
When I saw all over Pinterest these baked pies in the mini mason jars, I knew I had to try it. So my co-worker Michelle’s birthday was coming up and I thought I’d make these to take into the office. And I can report they were a hit at work.
They are a bit of work – even with ready-made pie dough and filling – but oh so worth it. Add some vanilla ice cream to the mix and it’s like buttah.
Mini Mason Jar Apple and Cranberry Pies
Ingredients:
1 package Pillsbury pie dough
1 can Lucky Leaf Apple Cranberry Pie Filling
1 Tbsp sugar
Dash of cinnamon
6 mini mason jars
Pam spray
Instructions:
Wash your jars in hot water and dry.
Preheat oven to 375 degrees.
Roll out your dough. Place a jar on the dough and cut a large circle out. You will be able to get 3 pie jars out of each pie dough, including covering the top.
Spray the jars with Pam spray.
You will need to gently fold the dough into the jar. Press the dough around the inside of the jar. Once you start pressing the dough, it will all fit together smoothly.
Repeat with the remaining jars.
Open the pie filling and add to the jars until they are filled to about the bottom of the rim.
Add your designs (or just a circle) to the top to cover the pies.
Mix together the sugar and cinnamon. Sprinkle on top of the pies.
Place jars on a cookie sheet and bake for about 35 minutes or until pie crusts are cooked.
Serve with ice cream. Enjoy!
