I have been making cheese dip/Queso for my family for years. And it’s always, always been with a Velveeta cheese. I don’t care what people say about this processed cheese, I love it.
Having said that, I’ve always been a snob about that cheese you get in a can. You know the one. The one that is on nachos at movies, baseball games, and any place else they sell nachos. I’m not a fan. At all.
Until last year. When I left my last job we went to have farewell drinks at Gibson’s Bar on South Lamar in Austin and my friend Kristin ordered this dish from Luke’s Inside Out, a food trailer next to the bar.
I looked at the dish and kind of turned up my nose at it because it had canned cheese. That lasted about ten minutes then I couldn’t take the bacon sitting there on top of the fries anymore and dug in. And proceeded to eat up almost the entire pan of these nachos. By myself.
So when I was trying to decide what to make for me and my dad for the opening NASCAR race, the Daytona 500, I thought I would make these. Oh what a hit! It didn’t hurt that Dale Earnhardt, Jr. ran spectacular the entire race and won the darn race! I may need to make these every race just to ensure he keeps winning!
Crinkle Cut Fries with Queso, Bacon & Jalapeños
Ingredients:
(Amount dependent on how many servings you want)
Ore Ida Golden Crinkle Fries
Bacon
Tostitos Salsa Con Queso
Jalapeños
Instructions:
Preheat oven to 425 degrees F.
Place the amount of fries you want on a cookie sheet. Prepare a separate cookie sheet by placing foil on it. Add bacon strips on top of the foil (about 2 per serving).
Place both cookie sheets in the oven. Bake for 10 minutes. Remove sheets from the oven and flip the bacon and the fries over.
Return cookie sheets to the oven. Bake for an additional 5 minutes and then remove bacon. Bake fries for an additional 8 minutes.
Drain bacon on a paper towel covered plate. Warm up Queso in a microwave safe bowl for :30 seconds or until Queso is to your desired temperature.
Prepare nachos by placing fries on a plate. Drizzle Queso over fries. Break up bacon and sprinkle over cheese. Top with jalapeño slices.
