For me, Christmastime involves a lot of baking. A lot of baking. I simply enjoy baking cookies and treats and putting them together for friends and family. It is definitely a labor of love. This year, I wanted to make something different – oh I’ll still be making my Spritz cookies, Gingerbread Snickerdoodles, and the kids favorite Chocolate Chip Cookies, but I was in the mood to share something else.
I made a version of these little treats earlier this year for co-workers and they absolutely loved them. So when I was thinking what treats I wanted to share with my new co-workers, these immediately came to mind. The peppermint baking chips and peppermint crunch give these a definite minty taste and add to the festive holiday atmosphere.
Peppermint Peanut Butter Balls
Ingredients:
1 c sugar
1/2 c dark corn syrup
1/2 c white corn syrup
1 1/2 c crunchy peanut butter
1/2 c Nutella
1 c Andes Peppermint baking chips
4 c rice cereal
Peppermint Crunch
Instructions:
Using a large saucepan, add the sugar and corn syrups together. Whisk together over medium heat for a few minutes until combined.
Remove from heat. Immediately add in the peanut butter and Nutella and continue stirring. Add in the baking chips and mix together.
Mix in the rice cereal and stir together until thoroughly combined. Using a cookie scoop, place a dollop of the mixture in your hands and roll to form into a ball.
Place peppermint crunch on a plate and roll the formed balls in the crunch to coat. Put the coated balls on a wax-paper/parchment lined cookie sheet.
Place in the refrigerator to set. You can store these in an airtight container for up to 2 weeks.
