Parmesan-Crusted Pork Chops

When I first started this blog, this Giada de Laurentiis recipe was one of the first ones I posted. Giada makes her dishes in such a way that anyone can make them. They are simple yet enticing. In fact, this dish made such an impression on me that it has turned into one of my favorite ways to cook pork chops. So when it came time to make a birthday dinner for my sister, I knew I wanted to cook this for her because she would appreciate it.  And I was right. She and the rest of the family loved these chops.

You can also use this breading on other things as well – fish, chicken, veggies – with the same tasty results.

Parmesan Crusted Pork Chops

Parmesan Crusted Pork Chops (Recipe from Food Network’s Giada de Laurentiis)

Ingredients:

2 large eggs
3/4 cups freshly grated Parmesan
1 cup dried Italian-style bread crumbs
4 center-cut pork loin chops
salt and freshly ground black pepper, to taste
6 tablespoons olive oil

Instructions:

Preheat oven to 350 degrees.

Using a medium bowl, whisk the eggs. Place the cheese in a separate bowl or plate. Add the bread crumbs to a third bowl or plate.

Season the pork chops on both sides with salt and pepper. Add the pork chops to the cheese and press down to coat completely on both sides. Place the pork chops in the bowl with the eggs and coat on both sides.  Next, add the pork chops to the bread crumbs ensuring the chops are coated completely.

Using a large skillet, heat about 3 tablespoons of oil over medium heat. Gently place the pork chops in the oil and cook until golden brown, about 2-3 minutes on each side. Place the pork chops on a foil-lined baking sheet and place in the oven for 20-30 minutes to finish cooking, until center reaches 150 degrees.
